Among the first natural nutraceuticals in human history, it is the main natural source of Vitamin E, able to strengthen the body's defences and prevent cardiovascular diseases. It has positive effects in biliary drainage, inhibits acid secretion in the stomach, and can limit cellular ageing.
Carboxylic Acid with 18 carbon atoms, belonging to the Omega-9 family, is a yellowish liquid at room temperature. It makes up 75% of the acids of olive oil in the form of triglyceride, while its free share must be less than 0.8% in extra virgin olive oil, as the quality of the oil is inversely proportional to its acidity. Also present in cell membranes and lipoproteins.
